Anyone doing the low/no carb diet?

That's awesome. I do the same for my dog, saw some TEDtalks about cancer rates in dogs. I don't know how accurate that is, but it stuck with me. I started cooking a lot more for myself and got in a health kick, so cooking for both us at the same time is simple.

You might want to look into feeding her fresh veggies as well! I usually include some broccoli, caulliflower, and carrots in her meal.

Also be careful with canned meat, they're usually high in salt. You can rinse them off three minutes+ and reduce that salt content by 80% (for tuna at least, I imagine chicken wouldn't be too different).

Thanks for the tip about the salt. I'm trying to make it more freshly cooked chicken, rather than canned.

My dog chews weeds sometimes. I guess that's how she gets her veggies. I don't eat any veggies myself, so unless I eat it, she probably wouldn't either.

I have not looked much further into all this, so by all means please correct me if there is any misinformation. Just some food for thought on the matter. My dog is like my baby, so I figured "why not?"

I have lost quite a lot of weight, but it could be due to being sick, and eating only 2 meals a day.

I went from almost nope to low carb, due to accessibility.

That's a good video. I think the main idea is to eat food that our ancestors would've eaten -- meat, veggies, fruit, nuts. Avoid processed food -- which includes processed DOG food. I bet "dog food" is a big reason dogs are dying earlier than they used to.

I like eggs. I thought I was allergic to them, but nope; it was the butter. Eggs and steak are a great combo.

Huh. Maybe just use less butter.

I don't spread butter on eggs, I put just one or two thin slices of butter in the pan and as soon as it melted, toss in premixed eggs to scrambled. To much butter would probably taste weird.

I don't use the butter on the eggs, either, I just use a little to coat the pan for cooking. Maybe 1/8" slice, not much at all, but that was enough to give me a big allergic reaction.

Now I use bacon grease to coat pans for cooking. That works better anyhow. Doesn't burn as easy as butter.
 
I use coconut oil for the eggs - but I'm lazy so I microwave the coconut oil for 30 seconds to melt it (mostly) and then microwave the eggs 'n' cheese for 2:30.

I took a few days off of the diet for Thanksgiving - basically from lunch on Tuesday when my brother in law made stir fry for the extended family until Friday night when I had some leftover pie, I was back in carb land. Definitely felt the difference, and honestly next year I may only do Thanksgiving day itself or not even that. Probably gained 5-8 pounds back, too, but that's not a big whoop. I am waiting to see the lab results from my doctor's visit this past Tuesday morning to see how my cholesterol and other levels are, but he's very impressed with the weight loss and the change in blood pressure. I might have to look into joining a gym again next year to start actually building muscle now that I've burned off a lot of fat, but that whole lazy thing may end up holding the top card.
 
Thinking about this as I do this crazy trucking job and go back on the road in a few days. I'm wondering what kinds of basic snack foods people have used. I have an electric cooler, but not a fridge. It's mostly for short term storage or for cold drinks. I go out on the road for 12 days.


I think plain Pecans and Walnuts are good. I can sometimes find hard boiled eggs to go in truck stops.

I'm trying to think of greens or veggies that might last in a cooler.

Once in a while, I come across a truck stop with cooked bacon n' eggs to go, but those are rare.

I might pick up a bunch of canned chicken and some tuna.

I think sometimes in stores you can find vacuum sealed Olives that don't require refrigeration.

Exercise is tricky to fit in. It will probably be walking or some kind of shadow boxing I guess.

Peppers, tomatoes, avocados, don’t need refrigeration. Celery and carrots can last in a small refrigerator.

Avacados seem to go bad fast. Maybe I need to store them differently. At the right ripeness, they're great food though. I will still pick them up when I do Walmart / Sams Club deliveries.

I might think about Celery with Peanut Butter for lite dipping as a snack.

This brand of Peanut Butter is nothing but peanuts. The oil does seperate, but it stirs together okay and I think keeping it in a cooler could slow down how fast it reseperates.

Just glad that since Thanksgiving, multiple Christmas related dinners, or staying at my parents house for home cooking, my weight has remained the same. Honestly felt like I ate like complete garb quite a few times, but I think having gotten myself into a low carb diet since the summer made it a lot easier for my body to remain on track.
 
I'm trying to aim for the Keto diet and I think it's working. I'll see how it goes when I'm and get on the scale. Over the Summer, I was headed toward 250. Last weigh I was in the 230s.

It's hard as hell to follow a diet in this job, but I'm working on it. The hours are ridiculous.

Then again, I also see truckers doing insane things like putting what looks like a cup of sugar in their coffee. I'm not exaggerating. Other mix a 32oz. coffee with 5hr Energy and also buy Monster Drinks.


I hope someday I can just get out of this insane job or at least get a local trucking job.

60 to 70 hour work week is typical. Ideally drive at least close to 2200 to 2400 miles per week. Some companies run longer and aim for 3000 miles a week.

In my position, I leave home for 12 days and sleep in the truck at truckstops or rest areas. That's a big part of the diet issue is eating well on the road. I don't have the room or power hookup for a small fridge, but an electric cooler. When I get home I have 3 days off then I drive for 12 again.

Trucking is a job for people when things just don't work out, but you want to get out of the bottom rung of the economy and not be stuck in retail or restaurants. It also does not take 2 to 4 years of school. It's crazy, but I'm taking home $800 to $900. After I get more experience, I might find a better job like Food Tanker.

Maybe focus more in on calories count and whole foods? I'm sure that still isn't easy while being on the road though.

I keep trying different groceries with good shelf life to bring with me.


I found these Olives that come in a pouch and require no refrigeration. I like to havv them along with some Pecans or Walnuts.

Sweet Peppers last well in my electric cooler.

I also have some canned tuna, salmon, or chicken, and extra olive oil to add to them.

I just got a black coffee and a burger at a truck stop. I took the bun off and threw it away. I think that kind of stuff is completely worthless as a food and that saves me some calories and carbs.

As for Fasting, I'm not doing anything hardcore with that, just sometimes skipping breakfast or lunch.

I am thinking there is something to lowering carbs or keto. I'm not sure if it's a diet for life or more of a corrective diet. It does help that most of the foods that fit this diet are satisfying and don't lead to hunger later. Yeah I had a bunless burger with plenty of calories, but that burger is going to last me a long time before I feel hungry.

I've been trying to aggressively Low Carb on the road. I got home and stepped on the scale. I'm 229 now. I haven't been under 230 in a long time. Last summer I was over 240 creeping up to 250.

On the road, I wind up grabbing things to go and often just tossing the bun. I've even gotten Meat Pizzas by the slice, ate the toppings and cheese, and thrown the crust in the garbage.

I'm also trying to have good basic foods on hand like plain Pecans or Walnut, those Olive snacks, or Peppers. I'm not doing the Carnivore thing, but I do keep some canned tuna, chicken, or salmon and add extra olive oil to them.

Update. Carnivore now 6 1/2 months. Well, I did have a few avocados the last couple weeks, but other than that, it's been all meat, fish, eggs, and so forth.

- 40 pounds lost; weight and BMI now within healthy range (first time in decades)
- better energy throughout the day
- better and more sustained mental clarity and brain function
- better mood, less anxiety, less bouts of melancholy, less reactive
- blood pressure down
- off 2 of the 3 meds I was taking, plan to wean off 3rd eventually
- HDL up, triglycerides down, HDL/tri. ratio much improved (this is one of the rare cholesterol markers with validity)
- no more sleep apnea
- various other minor improvements (no more skin tags, no more foot pain, no more indigestion)

You don't need to go carnivore, but I strongly encourage anyone to investigate the LCHF or ketogenic way of eating (of which carnivore is a subset). I've continued to learn about this stuff on a daily basis. It's been amazing, eye-opening, and life-changing.

Made some homemade no-carb pizza dough using almond flour, mozzarella, and cream cheese. Turned out pretty nice.

Also, I had some normal cake for a special occasion and felt sick for a week. Symptoms were indigestion and flu-like symptoms. Not sure if I actually had the flu, but the timing was rather suspect. Needless to say, I'm staying away from cake now. lol
 
Found some low carb pancake/waffle batter mix at Costco. Made some delicious waffles! Also, bought some Edamame Noodles from Costco but have not tried them yet.
