cockpit view makes little sense till you move to VR. so your looking at a screen that is already smaller than your actual windshield... so you want to put everything in the way of that, not to mention you are holding a sterring wheel in your lap and you want to see another one overlayd on that same screen. yeah, losing cockpit isnt a huge deal at all imo.

if you have a wheel..

without a wheel the cockpit view provides the most immersion my a mile

On console maybe. With PC you can get a triple screen set up and you can adjust the view too, so you do not see the steering wheel, or for me, I prefer having just the top of the wheel showing.

I need cockpit view to drive worth a damn. Don't use a wheel and have only used it a handful of times but I still used cockpit view. Bonnet view would be next choice.

Still just too hard to see though, usually isn't it? Sort of has always seemed a lot harder while hood or bumper view made it easier, or 3rd person perhaps.

but then we are again entering a fairly small majority, especially with a lot of the console games that don't even offer than option, right?

I can somewhat agree. Really depends on the size of the screen(s) you are using and how much FOV they are taking up. VR HMDs use over 100 degrees of FOV whereas a 50" HDTV 10 feet away uses maybe what, 25 or less? I personally like using cockpit cams still. I have a 27" monitor at arms length away from me so the FOV is pretty big still. I find I can get used to the smaller view through the windshield after a few minutes no problem and the payoff is worth it to me.

Either way, I'm ready for VR...

In many real racing series, drivers can't turn their heads because of head and neck restraints. Drivers learn to race only looking forward along with what is in the mirrors. All you need to do is watch your mirrors and keep track of who moves into your blind spot.
