Thinking of picking up a 7 channel receiver and want to make sure I don't miss a feature the consoles have that a receiver may not. Anyone prefer a brand over another or ones to stay away from?

Denon seems to be a reliable receiver. You want a receiver that does 3D, & possible 4K. You also want a receiver that gives you enough HDMI Inputs. What's your budget?

EDIT: These 2 seem to be what your looking for:

DENON AVR-X2000 7.1 Ch 4K Ultra HD Networking Receiver w/ AirPlay

DENON AVR-2313CI 7.2 4K & 3D Pass Through Networking Receiver

Really depends. Denon is good, I've never had a problem with Sony receivers or Onkyo.
I would question, outside of wanting to be future-proof, why you would want 3D or 4K at this point, seeing as how the console makers seem to be distancing themselves from 3D.
With regards to 4K, I don't believe the X1 or PS4 will ever support 4K gaming. The hardware just isn't there. We are still struggling getting games at 1080p/60 on consoles. 4K video/streaming on the other hand is viable. But keep in mind, You'll also need a 4K TV as well to take advantage.

But if you are content to go that route I'd recommend:
Sony STR-DN840
