I am playing Dance build with Thousand claw weapon that you get doing an evaluated side quest. Uisng the 1789 Musket (frost) to freeze the bigger mobs. In the latest patch, I heard they nerfed the freezing, so its harder to freeze mobs. I haven't update the patch, so I wouldn't know (its on PS5 so far, but will be on Xbox & pC soon) .

I won't say the game is particularly hard, but you can die in a few hits or overwhelmed if not careful. The waypoints (Veasel) can be a bit more spread out than say elden ring, & often there is a distance ( & ,obs) between the checkpoint & bosses (Think like tradiional dark souls game) . But thankfully the bosses are not annoying enough that the distance to get to them was a nonsense, so far.

I am about 80% of the way, & finished every side quests I can do.

I put some points (2 so far) into engineering so I get more loot/anima essense. Getting sufficent healing between mobs along the long distance between Checkpoint is very helpful.

The saddest thing about the game is,

Once I am done, it will be a vacuum that is hard to fill, as I am normally not a soul type person. Finding good action Hack & slash that isn't trying too hard to be soulslike (lost xp on death, hard booses that took hours to beat) is tough.

As someone that has Pediophobia/automatonophobia (fear of dolls, humanoid figures, even barbie dolls & shopping mall Maniqueins freak me out), I was pondering to get the game, but surprising I do not feel the fear of Aegis (your character) In fact I thought she is one of the cooler character I play, as oppose to genertic characters in many games.

I finished the game. I did all side quests bar one that is done halfway, as I wanted to close up thegame so I can start working (70% done) on my 3D print project that I neglected for a week.

Gameplay hours breakdown
I clocked 33hours total on steam. maybe 2-3 hours was me being lost trying to find a location on a side quest, or struck, & another 4 hours is on backtracking, & there are a but of backtrack, mostly for side quests. 2-3 hours griding extra experience.

The difficult
It is supposely easy by Soul games standard, but the game is NOT easy by non soul game standard. You can easily die wit a few hits from a regular mobs & when overwhelmed (even by 2 mobs) , can be deadly. Milage obviously differ on individuals. But for sure, how you build your character & gears you use affect how smooth the experience also. I used a maxed out supposely OP weapon (which require a bit of work to get), so its pretty smooth for me.
Also there are a few ways to cheese, which make the game even easier, like grenade spam. Hwoever, grenades, especially the improvised one don't drop like candy so save it for harder mobs & bosses.

Exploration.
Its generally fun to explore. You get tools that let you grapply, dash in air & break some doors & wall to allow more areas previously hard/impossible to traverse. If you play Metrodvania games, you get the idea. Also the 1789 Paris & surounding environments are amazing. From destroyed beauty of Paris to historical palaces & gardens. A star on its own.
One annoyance is some checkpoints are a bit far apart with many mobs in between blocking your way. It doesn't happened that often. I think onlay 2 and 3 are really far apart for comfort.

Mobs
The Mobs are fun & have variety in attacks & pattern. You need to change a bit whgen dealing with mob type. Its not the type of game where you button spam & get away with it, in a well soul like. The bosses are generally on the easy side. Interstingly, the first (mini) boss is the hardest one for me, as I was just fresh & getting used to the game, & have less tools. Most bosses are not particularly challenging (by souls standard), even without using cheese tactics.
returning back to checkpoint. Often minin bosses even main bosses are between checkpoints, which can0 be a problem when you are low in health. The plus side is, you can buy health potion & carry unlimited (will limited by how much you can afford & the stock in the boutique that is) It can run out if you are to zealous. They do repenished at some main story points.

Gears & Skills system
All weapons are unique & usually found in chests. Some side questing & exploriatin is needed to get many of them. They can be upgraded to level 5. rare materials need for the final levels. You can equip 2 weapon for quick swap. There are 3 attack buttons, & contexture base on on jump, sprint, hold etc.
On top of that you can equip hat, main body, pants & boots. Thes stats are fairly boring, Armor , some resistance, maybe loot multi, & more fashion show. Ther eis also modules (like perks) you can insert (up to 4) that give you bonus like more damage, more cold resistance, more endurance. Its adequdate but not existing. Lastely theer is also a soullike attribute system, each giving some bonus like more life, more armor, more damaage etc

Overall
8.5/10.

Did you have all the assists on? Game sounds great, but based on what you said, it might be too hard for me.

I had heard of this game but didn't know what it was about. Sounds like something worth checking out.

I only have the "not lose anima after death" assist. It doesn't reduce the difficulties of mobs, just the annoyance of refarming lost anima.

YOu do not have to worry, if it's too hard, you can always lower enemy damage. It can be done up to god mode literally, but I advise not.

Just try the default diff, and only lower the damage when you think its too difficult.

It’s pretty easy to be honest even with out the assists. A bit of balancing is definitely needed, especially when it comes to the grenades. I’m at the final mission now and have all the side quests done. My character is level 38. Probably an hour or two now left to finish it. The story is surprisingly decent and the way the side missions are integrated with the characters involved in the main plot is well done. I hope they make a sequel to this and I’ll be picking up any DLC they release.

The grenades are getting a nerf in the patch coming 29th Sept, which also bring NG+

The bottom line is, do not worry about the game being too hard. It's one of the most accessible games in the market (soul like or not).

Just enjoy the game, Combat & the environment are the stars of the game.
